I’m sharing yet another ‘throw it all together recipe’. These days I love a simple cake!
These are my go-to gluten-free cupcakes. We were off to a birthday party, so I pulled some together so Elena had something gluten-free at cake time.
These are great basic cupcakes; simple vanilla which can be dressed up however you’d like. I went with pink this time – word on the street was that the birthday girl was having a Peppa Pig cake.
I think I had the oven up a little high so the cupcakes cracked on top. And I could have been a bit more careful when I was spooning out the batter. Oh well, that’s what icing’s for…
Easy {gluten-free} cupcakes
125g butter, at room temperature
3 eggs
1 ½ cups White Wings Gluten Free Plain Flour (or gluten-free flour of choice)
1 teaspoon psyllium husks
3 teaspoons gluten-free baking powder
½ cup caster sugar
¼ cup milk
1 teaspoon vanilla extract (and a touch more, if you’re me)
Preheat oven to 180°C (355°F) and prepare a tray with cupcake papers (patty pans cases).
Sift dry ingredients into the bowl of a mix master and add other ingredients. Beat until smooth and a pale colour (3-5 minutes, depending on your mixer).
Spoon into cupcake papers, and bake for 15-18 minutes, or until a toothpick comes out clean.
Cool completely and ice as desired.
Yummo – I might even give these a try one day and branch out from the premix gluten free cakes.
